Chickpea Blondie’s

I love making healthy alternatives to sweet treats, but I often find healthy recipes intimidating and they very often include pricey ingredients. Not only does this recipe have simple ingredients that I always have in my kitchen, it is super easy to make, the blondie’s are packed with protein and are healthy too. These healthy chickpea blondies sure do hit the spot.

Makes 12 Squares

Equipment:

  • Food processor
  • Baking Tray or silicone cupcake tray

Ingredients:

  • 1 Tin Chickpeas – Thoroughly drained and rinsed
  • 1 Scoop/30g Vanilla Whey protein powder
  • ⅓ Cup Natural Nut Butter
  • ¼ Cup Raw Honey
  • 2 Whole Eggs
  • ½ tsp Vanilla Paste or 1 tsp Vanilla essence
  • ¼ tsp Baking Powder
  • ½ tsp Salt
  • 2 Tbsp Desiccated coconut (optional)

Method:

Pre heat oven to 180°C and line a baking tray with wax paper. Place all ingredients in a food processor, except for 1 tablespoon of Coconut, and blend until smooth. Spread mix evenly into baking tray and sprinkle with remaining coconut. Bake for 20 Minutes (or until a toothpick comes out clean).
Place on a cooling rack to cool down. Once cooled, cut the Blondie’s into squares (or pop out of you silicone muffin tray) and store in an air tight container.
