STARTERS: PEANUT BUTTER BUTTERNUT SOUP

 

Ingredients:

  • 500-700g butternut – cut into cubes
  • 1 red onion – chopped
  • 3 tablespoons spring onions – chopped
  • 1 small chopped re chilli (optional)
  • 1 large red/yellow bell pepper – chopped
  • ½ teaspoon crushed fresh garlic
  • 1 teaspoon pink salt and ½ teaspoon black pepper
  • 1- 2 tablespoons extra virgin olive oil
  • Boiling water
  • Fresh Coriander
  • 2 tablespoons Eat Naked Natural Peanut Butter

 

  1. Place pot on medium heat with you olive oil and cook your onion, garlic and red chilli.
  2. Add your bell peppers and allow cooking for 1-2 minutes.
  3. Add you butternut and stir often. Add your salt and pepper. Continue stirring. Add in your Eat Naked Peanut Butter.
  4. Add boiling water. Continue pouring until everything is covered by water and then just add a little more. Mix well.
  5. Add more seasoning as desired.
  6. Bring to boil then reduce heat and cover your pot and simmer for 15-20 minutes – until butternut is soft.
  7. Blend using an immersion blender to purée. Adjust seasoning if desired.
  8. Serve garnished with fresh coriander… ENJOY!

MAIN COURSE: PEANUT BUTTER CHICKEN CURRY

 

Ingredients:

  • 500g Chicken breasts – cut into strips
  • 2 tablespoons curry powder
  • 1 red onion – chopped
  • 1 teaspoon fresh ginger
  • 2-4 tablespoons fresh coriander – chopped
  • 4 tablespoons of tomato
  • 10 cloves
  • 1 cinnamon stick
  • 1 tablespoon organic coconut oil
  • 1 tin of coconut milk
  • Pink Salt and Pepper
  • 2-3 tablespoons Eat Naked Natural Peanut Butter

 

  1. Place pot on medium heat with coconut oil, onion and curry powder. Stir until cooked.
  2. Add fresh coriander, ginger, tomato, cinnamon sticks, cloves and stir.
  3. Add your chicken and stir.
  4. Add your coconut milk and Eat Naked Peanut Butter.
  5. Stir well and season as desired.
  6. Reduce heat and simmer until chicken is cooked.
  7. Serve with a super yummy dish of stir-fried cauliflower rice and coriander. YUM!!!

DESSERT: CHOCOLATE PEANUT BUTTER NICE-CREAM AND BERRY NICE PEANUT BUTTER MUFFINS

NICE-CREAM Ingredients:

  • 2 small frozen bananas
  • 1 tablespoon raw cacao
  • 3 tablespoons desiccated coconut
  • cinnamon ground
  • pinch of pink salt
  • 1 teaspoon crushed peanuts
  • ¼ cup water
  • 2 tablespoons Eat Naked Natural Peanut Butter
  • 1 tablespoons Eat Naked Raw Honey

 

  1. Place all ingredients (except water) in a blender/food processor. Blend until mixture reaches an ice cream consistency.
  2. Add water only if needed (if mixture is too thick).
  3. Place in a container and freeze for 20-30 minutes.

 

BERRY AND PEANUT BUTTER MUFFINS Ingredients:

  • 80g rolled oats
  • 200g almond flour
  • 2 smooshed bananas
  • 1 tablespoon organic coconut oil – melted
  • 3 eggs
  • 1 tablespoon chia seeds
  • ½ teaspoon cinnamon ground
  • 3 tablespoons coconut milk
  • 100g fresh berries (I used raspberries) – chopped
  • 80g medjool dates -chopped
  • 2 teaspoons baking powder
  • ½ teaspoon ground ginger
  • pinch of pink salt
  • 2 tablespoons Eat Naked Natural Peanut Butter
  • 2 tablespoons Eat Naked Raw Honey

  1. Preheat the oven 180 degrees. Place paper muffin cups into muffin tray. Roughly spray each with Spray ‘n cook.
  2. Mix the almond flour, oats, chia seeds, baking powder, cinnamon, salt and ginger together.
  3. In a separate bowl, whisk eggs, coconut oil, dates, banana, coconut milk, peanut butter and the honey.
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Gently fold your berries into the mixture.
  6. Divide your mixture amongst your muffin cups and bake for 20-35 minutes until your muffins are golden.
  7. Serve warm / chilled with your chocolate ice scream and drizzle your honey and sprinkle some crushed peanuts too… ENJOY!
